We have another HIT on our hands! This time via Miguel Moreno of El Filo. Some have posited “if you know, you know.” That appears to be true at this moment because El Filo, Moreno, & San Vicente are meaningful names to coffee lovers. They're synonymous with quality. San Vicente is a beneficio  devoted to helping fellow farmers produce better coffee & advocate for better pay to farms. It was through San Vicente that we met El Filo, a farm run by the Morenos. And let us tell ye, that 1st time we tried their coffee: skies cleared, mountains moved, & that cup sang. Here we are all these years later; El Filo still does it. This lot is 100% Pacas variety. Fruit was picked once ripened, sorted, placed in oxygen-free tanks to ferment with only yeasts & bacterias found in & on the fruit for 48 hours. After which it was run through a mill, removing the fruit, fermented for 24 hours, rinsed several times, & left out to dry on screens. The idea was to enhance fruit qualities & sweetness. Whoop there it is: another stellar Moreno coffee on our hands (& in our cups)! CHEERS <3 btc
